First off, let me say I have never really liked mac and cheese but, my daughter Meadow and my husband Marcus love it. Let’s be real. What kid doesn’t like mac and cheese? Most kids are used to the Kraft boxed kind, but that one is filled with unnecessary additives, GMO’s, and high fructose corn syrup. This mac and cheese is so good that even Meadow tears it up.
Kid Friendly Vegan Mac and Cheese
1 box pasta (I used quinoa gluten free macaroni)
3/4 cup nutritional yeast
1/4 flour (I used brown rice flour)
1 cup water
1 cup non dairy milk (I used soy)
3 T vegan butter (I used Earth Balance)
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp minced onion
Cook the pasta according to the box instructions. For the sauce, combine the water, milk and melted butter in a bowl and mix well. In another bowl, combine the nutritional yeast, flour, salt, garlic and onion. Heat a large saucepan to about medium and add the dry ingredients. Slowly add the wet ingredients while you whisk the sauce until everything is combined. Now, bring the sauce to a boil and it will start to thicken. Turn the heat back down and keep whisking the mixture until you get a desired thickness. If it is too thick, you can add some more milk.
Once a desired thickness is reached, add in the cooked pasta.
Remove from heat and serve immediately. If you reheat leftovers, be sure to add milk before reheating.
