Black Beans, Tofu and Veggies

This dish has so many possibilities.  You could add rice and wrap it in a whole grain burrito, or for a gluten free option, wrap it in a lettuce wrap.  Or you can eat it all by itself just as I do.  If you have never tried tofu, this is a great introduction dish because the tofu is blended and used as a sauce thickener.

Black Bean, Tofu and Veggies

2 1/2 cups black beans drained and rinsed

115g (1/3 a pkg) organic soft tofu

1/4 cup diced onion

2-3 cloves of fresh garlic

1 cup organic corn (fresh or frozen)

2 bell peppers cut in thin strips (I used green and red)

1 lg tomato roughly chopped

1/4 cup water

2 T oil (I used grapeseed, but canola or safflower would work too)

1 tsp chili powder

1/2 tsp smoked paprika

1 tsp fajita seasoning

1 T cumin

1 green onion

In a food processor or magic bullet blend 1/2 cup beans, onion, tofu and water.


In a large pan, saute the oil, garlic and peppers for about 1-2 minutes.


Add the pureed mixture, the spices and remaining beans.  Saute for another 3-5 min and then add the corn.  Saute for another minute.


Remove from heat.  Add tomato and green stir and immediately from pan.  At this point if you like, you can add red pepper flakes, avocado or tabasco.  Enjoy! 🙂
