This is one of the first things I made when I started making my own food. My mother in law is Turkish and she was the one who introduced me to it. Its so easy and a great way to get lots of veggies in your diet. I love making it with my 3 year old daughter because she will munch on the veggies as she helps throw them in the bowl.
I usually make a huge amount of it because it goes fast in our house. I used dried beans because they are cheaper than canned and they taste clean without that gross aluminum aftertaste. All you need to do is soak them overnight and then boil them on the stove for about 15 minutes in the morning.
Super Easy Bean Salad
2.5 c white beans drained and rinsed
1-2 bell peppers chopped (I use whatever colors I have on hand)
1 pkg cherry tomatoes (Any tomatoes would work. I just like the sweetness of the cherry ones)
3-4 green onions (Any onions would do really. I just like the mild flavor of the green.)
1 cucumber peeled and chopped (I remove the seeds, but you don’t have to)
1 bunch fresh flat leaf parsley (Dried would work too)
Juice of one lemon
1/4 cup white vinagar
1 T cumin
1-2 T olive oil
salt to taste
I usually play around with the seasoning amounts. Feel free to add more or less to fit your tastes. I love cumin and that is why I add a good amount. Non vegans, feel free to add feta cheese in there too.
