What to do with left-over almond meal

So lately I have been making my own almond milk.  It is delicious and so easy to do.  Not to mention free of chemicals and additives.


After the almonds are “milked”  you are left with the meal.  If you dry it out in the oven and process it into a fine powder, you should able to use it in place of flour.  I have had several failed attempts at baking with the meal, but today I got lucky with my almond banana chocolate chip muffins!




They were so good that my husband and 3 year old devoured them before they finished cooling.



Almond Banana Chocolate Chip Muffins

1 1/4 c almond meal

1/2 c spelt flour

1/2 c rolled oats

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

2-3 mashed bananas

1/4 c maple syrup

1 tsp vanilla

1/2 c non dairy milk (I used soy although almond would work too)

1 egg replacer (I used a flax egg. 1T flax meal and 3T warm water. I put it in the fridge for a few minutes until it gets gummy.)

1/4 c chocolate chips

Preheat oven to 350

In one bowl, mix all the dry ingredients together.  In another bowl mix the wet.  Add dry to wet and mix well.  Put batter into greased or lined muffin tins.  Bake in the oven 20-25 minutes or until toothpick comes out clean.  Let cool completely before removing from the pan.
